This is a great alternative to the traditional banana bread/muffins.
No added sugar, oil, butter, flour or eggs and only one mixing bowl.
Kid Approved too!
6-7 Bananas (approx 2 cups)
Note: the more ripe, the sweeter the mixture will be
1 cup Nut Butter (we use almond)
4 cups Oats (rolled)
1 teaspoon Cinnamon
1/2 - 3/4 Dark Chocolate Chips
Pink Himalayan Salt (optional) sprinkle over top after being baked
Heat oven to 350 degrees
- Line a 8x8 baking dish with parchment- makes for an easy removal.
Put the oats, nut butter, bananas and cinnamon into a large mixing bowl and mix well until fully incorporated.
Fold/mix in 1/2 cup of dark chocolate into the batter
Place the batter into the lined pan.
Sprinkle the remaining chocolate chips over top (optional)
Place in oven and bake for approximately 20 minutes until golden brown.
Remove from oven and allow to cool completely before removing or slicing allowing it to set and firm up.
*If you just can’t wait for it to cool, like we can’t, be careful and don’t burn yourself
Keep these in a ziplock bag, or airtight container up to 3 days. (I always prefer the refrigerator)You can even cut, wrap and place in freezer.
The dark chocolate chips you can totally mix up with larger chunks of chocolate or even use the mini’s! Have fun with it, yes dark quality chocolate is meant to be enjoyed!
